Eunice’s Country Cookin’ began its humble beginnings in 1976 in a little house on Jenny Lind Ave. close to Ramsey Junior High. This house was the original location for Catfish Cove, where Eunice was the head chef. When Catfish Cove moved to their new building on Phoenix Ave., Eunice and Roy Waggoner decided to try their hand at owning their own restaurant. It was a family affair with Eunice teaching her son how to cook and her daughters how to waitress. After twenty successful years, the little house burned down June 13, 1997. With Eunice and Roy not wanting to start over, their son Dennis and his wife Cindy decided to re-open the restaurant four months later at its present location.
