Pack up the ice chest and head to Vacherie! Make a stop at La Bon Boucon for andouille and maudlin, a specialty of theirs. The maudlin is like a giant stick of andouille. We slice it thin and pan fry it for charcouterrie boards, snacks, sandwiches. There is no bad way to eat this. The regular andouille is also spot on.
