The Adobe Inn is a restaurant and hostel located in beautiful Ridgway Colorado.I can't attest to the quality of the hostel, as I've not stayed there as a guest in probably thirty five years, but I can tell you they make a mean New Mexican meal.One of my favorite dishes is the New Mexico Beef Enchilada (although all of the enchiladas are delicious). This mountainous enchilada is plenty for the largest appetites (especially after the homemade tortilla chips, homemade salsa, and tostada or salad). Most of the dishes are served with a corn casserole that is one of the best side dishes I've ever eaten anywhere.On top of the delicious food, cozy and inviting decor, and wonderful wait staff, the house margaritas are the perfect complement to a delicious meal.I would recommend reservations, as it is a popular weekend destination. One of my top spots in Ridgway!

Awesome food! The chile Rellenos were great, but the corn tamale casserole was fabulous. My Coke was only $1.50, so I don't know where the other reviewer ate...I heard this place s closing for good in Oct. :-(

We shared a 50th anniversary with very good friends, the company was outstanding, the food was terrific, yes I would recommend it, yes I will take my family to dinner there.

Love this place! Have staid in the hostel many times going or coming from Grand Junction & Telluride. This time an old fried was visiting from Portland. We had met in T-ride in the early days of the ski area. On 7/7/19 we spent the day in T-ride visiting old friends and places. Had a reservation at the Adobe Inn so we would be ready for the wonderful margaritas and good food, and Orvis Hot Springs the next day. I had the tostado done VEGAN. Their house made wheat tortilla shells are the best EVER! Saw more old friends from Telluride. Doug, our waiter, is always great. He has been there about 20 years.

Quaint place with a great atmosphere. I've always found that you can tell a lot about a Mexican restaurant by their salsa and the Adobe inn was no exception. Their salsa, like their food was very flavorful and unique. We had the combo plate which included a chili rellano (which we opted to have filled with their spinach) we were BLOWN away by the flavor and the corn casserole was EXCELLENT!!The service was friendly and prompt. The best in Colorado.

Love the Adobe! Love everything on the menu! Love the service! Such a great local's hang out! Fresh, flavorful food! Great margaritas! The kahlua mousse is a must! The flour chips are amazing! I just love this place!
