Cantonese style is probably the most familiar to Americans, originating from the southern region of China, and is best known for its quick, stir-fry cooking, a method of cooking where the meat is tender and the vegetables are crisp. Mandarin style originates from the northern region of China and is best known for its spicy flavor.
