“I get a weekly email from them about the farm and products and I always learn something from Chris. He wrote an email about controlling your own tenderness in the steak by leaving it in the refrigerator in package to “age”. Interesting I thought and worth a try since we love a good filet occasionally.
So I ordered 2 filets (they delivered to our house!!!) along with some eggs and other things and let them thaw and sit in there for 8 days.
Cooked them tonite via sous vide and then did a quick sear. They were the most tender and delicious steaks we have had in a LONG time. Unbelievably good.
Can’t wait to try the strips and the ribeyes.
