Gillis Meat Processing is a great store with fantastic and over-the-top service. The food is outstanding, delicious, and the best in the south. Their boudin and sausage are the best around, and the smoked boudin is the best ever had. The chicken cracklin is a discovery, and their pressed shrimp Po-boy rivals those from New Orleans. The jambalaya is soo delicious and outstanding for feeding a lot of people, alongside delicious burgers and green beans. Their spice is also recommended. The owners are great people, and the business is considered by far the best.
