Purchased a side of beef that was processed by Litchfield and on two separate occasions we have pulled out steaks, once it was t-bone and tonight it was swiss steak and they were spoiled. Pulled at 4 steaks at lunch, thawed by dinner and when opening the packaging it stinks to high heaven. The t-bones last summer had a very nasty black look on the tips and they smelled horrible. It was make you gag horrible, and I've dealt w/ multiple dead bodies in my career. Tonight when we defrosted 2 t-bones and 2 swiss steaks, the swiss steaks smelled like sour spoiled milk. We've had meat from 3 different butchers in NE and never had this happen. The ground and pot roast from Litchfield were ok but the handling on these 4 steaks were obviously compromised if they smell and look that bad on the day we pull from the deep freeze and defrost. These were left on the counter over night these were all same day defrost to have for dinner failures. I won't buy from my rancher if he uses Litchfield to process my side.Out of courtesy to my rancher I've blocked him name from the packaging.

Overall we are pretty happy with the hog processing we had done. My complaints are that the sausage is sloppily and loosely bagged and the ham had dead spots and didn't even taste like it was cured. But one thing we are very happy with is the bacon, it tastes great! Perfect amount of smoke and not too salty.

We had a Grass-Fed, PRIME Angus beef butchered here and the meat we received back was somebody else's old cow... The steaks and roasts were extremely old, tough, full of gristle and fat! Too tough to eat! When a sharp knife can't cut through a Tbone or Ribeye steak, you know it was an old cow that got switched out for the expensive Grass-Fed, Prime Angus. On top of all this, every package of burger had frozen blood smeared all over the outside of the package. Half of the steaks and roasts did not get sealed with the cryovac machine. And we specifically asked for our heart, liver, tongue and soup bones we didn't get any of that back. We asked for 1 inch steaks and got 1/2 inch which didn't make a difference cuz they're too tough to eat anyways..

Just had a cow butchered by this pack and what a scam. Us and a friend went in together and purchased a cow and had Litchfield Pack process it for us. The other person picked up all our meat and theirs on saturday, and that in itself was a nightmare. They couldn't even find where his meat was for a while. Then once he received it he had a feeling something was off. He did this same thing last year with a smaller cow and got just about the same amount of meat that he did this year. Only difference is this years cow was much heavier than last years. So when he got home we weighed all our meat out. The hang weight for our cow was 455, what we received was 252.59lbs. And the other guy only received 249lbs of meat, now granted we got beef sticks and those shrink and I understand that, but the other guy didn't. Your going to tell me there was over a 45% lose from the hang weight on both sides of beef. I call a major foul somewhere, but if that wasn't bad enough. When he picked up he asked for the tongue, liver, and bones and was told that was all thrown away. Why? Who authorized you to throw meat that was paid for away for starters. Second you're going to tell me that stuff that sells for $10-15/lb was just thrown away. I don't believe it for one minute and wholeheartedly believe it was either resold or kept. Because no one just throws away expensive cuts of meat. When I called them this morning they told me what I should have received weight wise. Which is still a higher number then what I got. But then he continued to tell me that everything was thrown away. When I asked who authorized them to throw it away he wouldn't answer. When I said "your going to tell me here was almost a 200lb loose on both sides of beef from the hang weight". He just kept saying that the other stuff was thrown away. Which I do not believe for one bit that on the whole hang weight of about 900+lbs. you threw away 400lbs of what they call "fats and scraps". After speaking to them today, and being told "I'll sue you" for telling him that there are several reviews online that say there's something not right going on there. And that I should have followed by gut feeling and requested a different processor. I was then told "i'll take you to court" because I said that I was going to take further actions against them if this was not resolved and the missing meat was not returned. Following that comment I got cussed at and hung up on. Which I found quite interesting if you did nothing wrong why become hostile and vulgar. Once we weighed it all we tried to call on saturday and they were closed (we live 3 hours away). So I went to our local butcher who also does the same thing. And was told that something is very off as well. Because in the 50+years they've been running their business they have never had or even seen a loose that high. I then called another butcher to get a third opinion and was told the exact same thing. Something's off there's never a almost 400lb loose from a hang weight on a cow. Either they for got to give you some stuff or something foul is going on. But 2 different butchers and processors confirmed our suspicions that something very wrong went down.
