Got a seat right away and with the 3 kitchens preparing orders food comes quickly but not all at once. It's best to order multiple small plates due to that timing. Tried the quesabirria, chorizo sopes, dim sum and the mushroom noodles. The sopes were probably the best and could have eaten 3 orders as one order just has 3 and they are golf ball sized.

China Poblano is a Chinese Mexican cuisine fusion restaurant that adds their own fun twists to these classic dishes. Located on the second floor of the Cosmopolitan, there tends to be a wait to get seated. For a part of two it took us about 10 minutes to get seated at the bartop on a Sunday evening, so definitely not a long wait if you have a smaller party willing to sit anywhere! When we sat down, our server was also the cook who was preparing food behind the dim sum bar. He was so kind and patient with us, also more than happy to share his recommendations. He also took the time to have fun conversation with us during our meal as well! We ended up ordering the empanada atun estilo veracruz (ahi tuna empanadas), quesadilla de chicharron, rice and noble congee, tuna ceviche, and golden pigs (fried Chinese barbecue pork and condensed milk). We recommended to order a mix of both their Chinese and Latin dishes, and I'd recommend you all to do that as well! Each dish was so unique and it was interesting to see the restaurant's take on such classic dishes. My favorite had to be the Golden Pigs. When ordering, we were very skeptical of what to expect as it's a savory dish being served with condensed milk. But it surprisingly and pleasantly works so well together! The perfect combination of savory and sweet, and honestly I wish I could have more! My least favorite had to be their empanada. I think the tuna made it have a softer texture as the filing and it kind of felt like I was tasting tuna salad but without the other typical veggies of a tuna sandwich. The congee was also done so well, with additional flavors to the porridge that elevated the dish completely! And the ceviche was just such a classic dish that we had to get with the tortilla chips. So refreshing and crisp and exactly what we needed for a hot day. The quesadilla was also perfect, with the blend of the Menonita and Oaxaca cheeses complementing the subtle crunch of the chicharron. Overall, I highly recommend checking out China Poblano. It was such a pleasantly surprising wonderful meal, and I can't wait to go back the next time I visit Vegas!

This place was amazing. They make your guacamole fresh and tableside, hence the price! Very good quality dumplings too. Tried cactus here for the first time, also very good. Be careful with the yellow sauce because I found out that is NOT cheese, that is habanero! Haha but it was all good. No complaints at all, but you must try the quesabirria- out of this world. Will be back soon to try even more of the menu. No pics because the food had me so occupied. Also was on a magical second date, great atmosphere for dates or groups or families!

Delicious and different! Had such fun here for a birthday dinner. Our server Jisrael gave us a fantastic experience. Stand outs were the cranberry Margarita with salt foam, chips & smoky salsa and the 21 ingredient fried rice. Don't forget the churros with Mexican chocolate dipping sauce! Highly recommend this fun time at the fabulous Cosmopolitan. Go to the stunning Chandelier bar before or after!

The service is top notch which is why I feel awful with 3 stars. I always admire Jose Andres as a chef and the food he represents which is why I am disappointed with this restaurant concept with two kitchens; a Chinese and a Mexican. While I didn't sample the Mexican cuisine until dessert, I was disappointed with the Chinese version. The wonton is a very weak attempt and the Har Grow was not even close. The texture of the Har grow wrapping and the filling are the two important concept. The wrapper falls apart without chewing. The filling was bland. The good news is the roasted eggplants was the star of all the dishes that I sampled. The bbq ribs were okay. Again, if this restaurant was not by Jose Andre's I would not have tried. The server asked what I think and he brought out churros and oxaca hot chocolate. The hot chocolate was good but I pass on the churros. It is not what I expect from Jose Andres kitchen. I want to love the place because of the staffs but i cannot z

What can I say the vegetarian tasting menu blew my mind.. better than most Michelin 3* restaurants in US. Poetry is how I would describe the chef’s recipes .. simply amazing. Margarita with the salted froth .. other worldly!

Loved everything we tried.Their coconut ceviche was super yum, nothing I’ve tried before. Don’t forget to get their special fried rice. The mango stick rice dessert is a must try.. not too sweet and light

When I first heard that this place serves both Chinese and Mexican food, I was like, "What?!" However, it does offer flexibility for different cravings. That being said, I didn't notice any tables ordering both Chinese and Mexican food at the same time. We opted for the baozi along with some beef noodles. The food was okay, but nothing extraordinary. The service was decent as well.

We arrived 11minutes after our reservation time due to a transport issue, we apologized when we got there and the server rudely and repeatedly highlighted our fault in timing and had released our table after 10minutes and no notice. She refused to make any reasonable accommodations despite many readily available tables and would only seat us on the counter next to the stove. She again highlighted our lateness and that no accommodations can be made beyond the 10min window. Never had such a poor treatment at any of the José Andres’s that I’ve been to. Ended up in Jaleo and had great service there

Lamentable, the service canceled our tableas we were 2 minutes late and tried yo sit us on the coubter with full restaurant empty. This hurts the reputation of someone that does so many good things as jose andres
