The Allsup’s chimi is a cornerstone of the Eastern New Mexico culinary landscape. With its hard, crunchy exterior and soft, mushy inside, it embodies both the grit and duality of Portales, NM. However, the employee did not seem too pleased about me paying with a fifty.
