“Buffalo is blessed with fantastic chocolatiers. Each one can put his own spin on their candy. When you walk into a chocolate shop it is a religious experience. You aren't there to buy a box of chocolate and rush out the door to Wegmans. You are there to celebrate the masters of their craft. So Mr. Cork sniffer, is Parkside the best? It might be. Watson's is also my favorite. I'll just stick to talking about sponge. Parkside has the thinner sponge pieces. I might favor that format. But they both are kings. You can love two things the best, right? You have to be aware that sponge is delicate. So is the chocolate too. Maybe you kept it too long. Maybe, god forbid, there is a bad piece. Like mold on cheese, sediment in the wine, and grizzle in the steak - sometimes it has flaws. But Buffalo sponge is a treasure. Thank your lucky stars the place exists. Now go buy some!”
