“So this will be the 2nd review for here after the forst one I left around 2 years ago.

I finally found the damn pans I was looking for. Hestan Pans!!! The two Hestan sheets pans I got are remarkable.

Not sure if your familiar with Thomas Keller, but I am a huge fan of the American chef after getting his Cangsan signature knife collection. NSF German Steel, handle fits snug in the big hands with a nice end catch and guard. Handle being hefty but the blade balances it out. Not slim and won't slip out of my hands.
This man also currently have 7 Mich Stars and two of the three restaurants are both 3 star. I have taken his advice to heart.

Now back to these Hestan two pans which dont have the roll up ends!!!!! This is like the bane of my existence for using and cleaning them before. These are my dream sheets, hehe.
Unlike every other single design pan does. I wanted to eliminate this factor to see if my food will taste different. In those rolled parts, even if you hand scrub it, can have rust, char and other materials stored in it.

Don't believe me? Unfurl one of those pans, especially if it older than 2 years old and you ran it through the dishwasher even once. You will regret it like I did.

Came home today, used it, cleaned it, placed it in the dishwasher. Came out perfect, fine, no chips, marks, rust.
I would say be careful as it retain HEAT very well so get like a cooling rack or just keep it on the stove for like 5 to 15 minutes to cool prior to cleaning. Some decent oven mitts too.

And yes, my food tasted so different. I did two entrees, a simple sirloin and broiled it at 500F to test integrity. No damaged to the pan. Blood was char boiled on it so had to scrub it off.
2nd I did roasted carrots broccoli and asparagus. Extremely light oil as after the steak, it will boil the residue, so be careful of ignition points. No white smoke luckily.

I can see these pan lasting me a lifetime.
Now I do hope Gourmet Chef will expand this collection, because I would love baking sets too haha.”
