Last year I attended a two day charcuterie intensive hosted by pig and leaf farms led by Meriden Leigh, this year I attended a whole hog butchery and charcuterie workshop 21-23 November with Andy and Doug as our facilitators.A huge shout out to Cliff and Jen, they are warm and welcoming. Last year I drove back and forth but this year I opted to camp on the property rather than drive (slept in my camper shell).Wonderful family who are supported from what their land provides, Cliff with his wealth of knowledge and Jen with her artistic side as well as a wonderful cook! The fresh veggies and forest raised pork painstakingly fostered and bred back to its heritage taste and appearance.Thank you so much for opening your homestead to all of us and sharing your experiences so we may all live better from the earth.
