“I have frequented this amazing butcher because it is privately owned. Always a butcher you could trust: honest, hardworking, an amazing team, great specials, and I never minded paying more for meat I know comes from a locally sourced Texas rancher. Now that it will come under new ownership. We, locals, HOPE things will not change. For instance, cheaper cuts of beef from other states or from Argentina. Most importantly, lab-created beef. Some of us have the fiscal abundance to have red meat tested at Texas A&M and elsewhere. New owners [ you three], I hope you have the same integrity as the original owner(s) of Hirsch. Cheers,”
