Gillys Chile is located right off the highway as you arrive in Hatch. It is the spot to go for authentic Hatch chile, including the popular Lumbre variety. They offer the best green chile, powdered jalapeño, and jars of hot green chile. The store has ristras, salsas, and other agricultural products like pecans and pistachios, along with chests full of frozen roasted chiles. Prices for everything are the best, allowing customers to buy directly and cut out the middle person. The customer service is outstanding, with everyone described as friendly, helpful, and kind. Staff offer samples and give ideas on how to use the products. The overall experience is wonderful, leaving visitors with full hearts. Many customers highly recommend stopping in and plan to return, calling it the absolute best experience and stating there simply is not a better chile company anywhere. The business is open Monday through Sunday with varying hours.

We stopped on our way home from the Annual Chili festival. Everyone was super nice and we brought a few items. Watermelon sampling was the best! We bought one lol! Building was nice a clean. Their a/c was great after all the walking. Thank you Gillys!
