Snow's BBQ
516 Main Street, LexingtonWhat can I say about Snow’s BBQ that has not already been said? I’ll give it a try.
Under cover of the night we we traveled Texas backroads and highways arriving in Lexington Texas and Snows BBQ at 6:30am to be greeted by roughly 70 others lined up in lawn chairs. Later we would learn we were actually 63 and 64 of an eventual 96. Conversations could be heard with people sharing stories of where they were from, establishments they have visited, and multiple of other topics. At around 7am the owner Kerry Bexley greeted the crowd asking the line to “count off” assigning each other a number for his weekly raffle to take place later. Prior to opening at 8am Kerry would raffle off prizes of various merch and a convented skip the line pass. For me at that point things began to change, it wasn’t just about barbecue anymore, something was different. As the sun rose the National Anthem was played in a very country down home version that had heart and grit. I had a sense of country, tradition, and a deep routed wholesomeness. Then to my surprise a playlist started that included artist such as Prince, Rick James, Shalamar, ZZ Top, and the Rolling Stones. Music that made me smile inside. Kerry announced that the free bar was open serving Mimosas, Bloody Marys, and beer! The setting was quickly changing from a sleepy BBQ line to an 8am summer block party / festival!
The line slowly moved just fast enough to open up seating as the first in liners were finishing up their food. The atmosphere was fun, festive, neighborly, and friendly. The pits in the background were being tended by Kerry’s long time friend and legendary award winning pit master Tootsie Tomanetz at 91 years of age! This was becoming like a psychedelic dream as I was meeting people from all walks of life that had traveled from different corners of the world to experience this item that was, “on their bucket list”! Kerry and Tootsie were posing for pictures with smiles and appreciation with the folks in line!
This wasn’t that new “Texas craft BBQ” with things like, “Honey drizzled raspberry burnt ends over micro greens”, “Lavender-infused Brisket Confit”, “Peach-Bourbon Foam over Post-Oak Beef Cheek”, this was about tradition, history, Central Texas hospitality, smoke, time, and love coming together meeting the meat. There was music, beer laughter, and people coming together in community experiencing a culture like no other. Once we received our food we joined people we met in line to experience the straight to the point smoked meats. Ironically the smoked meat was just a small part of our overall experience. Looking back just a very small part!
