“This place and its people are great, a real service to those in our community who want to excell in our kitchen.
The meats, wines and other products are finest kind and the staff is eager to help.
Thanks for helping me find duck fat for my potatoes”
“I can’t say enough good things about Gibson’s Custom Meats. From the moment you walk in, it’s clear this place takes pride in quality. Their meat is consistently excellent, fresh, and well cut, and they offer a very wide range of options whether you’re shopping for everyday meals or something special. Everything I’ve purchased here has been outstanding.
The staff is incredibly friendly and knowledgeable. They’re always willing to answer questions, make recommendations, and help you find exactly what you’re looking for without making you feel rushed. It genuinely feels like a local butcher shop that values customer service and builds real relationships with the community.
One thing that really sets them apart is their Pay It Forward program. It’s an amazing initiative that allows customers to help others in the community by covering the cost of an essentials meat pack for someone in need. Seeing a business actively give back like that speaks volumes about their values.
They also offer a military discount, which is very much appreciated and another example of how they support their customers. Between the quality of the meat, the wide selection, the welcoming staff, and their commitment to the community, this place easily earns five stars. I highly recommend stopping in if you’re looking for a butcher shop you can truly trust.”

“Approaching from the outside, I was not impressed. However, upon entering I was pleasantly surprised. The dining area was neat, tidy, and the decor was gorgeous. The service was speedy and kind, staff were quick to ask for our order and pateint when we were not ready. Although you order at the counter, your food is brought to your table should you choose to dine in. The food itself was outstanding, despite my dislike of cilantro, I adored the nachos I ordered, filling and flavorful in a way that truely coats the tongue. This was also my first time trying Horchata and was not disappointed. All around a very nice experience and great place for a date.”
“Beautiful shop fully loaded with any type meats you could want. Our grass fed New York steak was unfortunately terribly tough even at 135 - 145 degrees
Won't buy that one again but have other great meats!!
Worth the trip ?”
“This is the only place in Thurston county that I buy meat. Prices are on par for quality meat. The jerky is outstanding. The place is always packed so expect to wait for service.”
“09/15/25 Today I called in a couple of times to ask if the store had some things I needed atm. The same person answered the phone both times (The calls were only a couple minutes apart) and each time the person working (Lindsey, perhaps was their name?) was very kind, quite quick to answer the phone (which was nice), and I was very impressed that they seemed to just know what felt like everything in the store-- Aisle numbers and everything! I also appreciated that they physically checked the aisle on my behalf as well. Thank you, Lindsey!”

“This is a magnificently well stocked grocery store. We stopped in for something to take to our hotel room and found a deli that was very well stocked. I ordered a custom sandwich with ham, salami, cheese, mayodijon spread and spinach on Rye Bread. It was superb. Did I mention that we were treated with the greatest of respect by the deli operators. They were so very helpful.”
“This establishment has been in business for decades. That is hard to do in Meat Market. It's difficult to make a good margin so you can pay the RealEstate Cost, Expensive Meat cutters, Utilities, every day cost of Bags, Machines, maintenance , accounting staff etc ..... I have experience at managing a leading Grocery Store on the West Coast. Managing the store and all departments is difficult. Meat is very difficult to make a good margin due to highly perishable product and waste. One needs to be a good leader and trainer, have Consistent Processes we know the cost of. Western Meats is that kind of place. Hats off to the owmers, managers and staff
Western Meats has a vast selection of Beef, Pork, Chicken, Great sausage selection, Very good Beef Jerky and Pepperoni in many tasty varieties that don't cost both arms and a leg so no need to break into your slush fund.
( At this shop you can get a higher grade of meat that you don't get in a conventional Grocer. Retail Grocery Meat used to use the high grade meats but now they serve lower grade but high price it.
You can get the higher grade of meat at Western Meats with a cost as good or better than the Grocery Stores. Try it for yourself
If you want a quick meal many items are prepared in sauces so just put in the pan.or oven. The prep is all done. They even have cooked meat balls so just boil some noodles, break out a jar of Newmans Own Sauce or your choice of sauce, put the BBQ Meat balls in and you got dinner in 15 minutes, it's excellent.
Try the Stuffed Chicken Breasts. Prepared Meat Loaf, just put in the oven for approximately 50 minutes and you can be Loafing for Dinner. So much else to choose from, try this shop, I think you will like it. Great Selection, Very good prices and good service.
Don't be afraid to ask for a sample!!
If you like a Tuna Sandwich try a can of the Coast Line of Oregon Canned Tuna caught off our cost and canned by the outfit that catches It. When you open the can it's solid.Tuna. Overall I think it is cheaper than the brands you get at the Grocer. The Tuna tastes like your getting a Tuna from the peak market in the 60s and 70s. Taste is Great and that solid cut of fish makes a lot of Tuna Salad. Love it !!
Western Meats, you won't be disappointed!!!
It's 4.5 starsestablishment.
You can even score a solar eclipse at this joint! They have it going on.”
