Everything we ordered tasted fresh and made with real, quality ingredients rather than the usual frozen or pre-packaged shortcuts you get at a lot of places. You can tell the kitchen is putting real effort into the food, and that part of the meal was outstanding.
The location itself is a true gem. Sitting right adjacent to the seaplane port, the restaurant is heavily aviation-themed, which adds a unique and memorable character you won’t find elsewhere. Watching the seaplanes come and go while you eat, surrounded by the aviation touches throughout the place, makes the whole experience special. Combined with the lakeside setting, it really elevates the visit.
The overall dining experience—location, atmosphere, aviation theme, and the actual food itself—had me ready to leave a very strong review.
Then the check arrived and the experience fell apart.
The owner has decided to add a 1% fee that is supposedly meant to supplement the back-of-house staff’s pay. On paper it might sound like a small, noble gesture. In practice it is a poorly thought-out policy that creates more problems than it solves. Its low iq. Instead of simply paying the kitchen staff a competitive wage out of the normal cost of doing business (the way every responsible restaurant owner is expected to do), the owner has chosen to push this charge onto customers and, worse, force the servers to explain and defend it.
That is not fair to anyone. Customers are hit with an unexpected fee that wasn’t clearly presented up front, and the servers—who have nothing to do with the decision—are left standing there trying to justify their boss’s policy. Watching a waitress have to explain and essentially apologize for a charge she didn’t create was uncomfortable and unnecessary. The wait staff should not be put in the position of being the whipping boys for a decision made by ownership. They already deal with enough. Making them the face of a controversial surcharge is a bad management choice.
If the owner wants to pay the back of the house more, the adult way to handle it is to adjust menu prices, raise wages properly, and absorb the cost as part of running the business. Adding a separate 1% line item and then making the servers defend it is not clever or customer-friendly—it’s just passing the awkwardness down the line. Customers end up feeling nickel-and-dimed, and the servers end up looking like the bad guys for something they didn’t invent.
The food itself and the amazing aviation-themed location by the seaplane port deserve high praise. Those are the highlights and what make this place special. But the 1% fee policy, and the decision to make the servers defend it, was enough to sour what should have been a straightforward positive experience. A good owner pays their people correctly and doesn’t put the staff in the middle of a customer-facing surcharge. This approach feels shortsighted and unfair to the people working the floor. I hope they reconsider it.
